Sto seguendo passo passo le tue indicazioni:
ho creato una cartella dev e incollato dentro tutta la cartella scaricata da
github e rinominata qgis3:

ho lanciato il comando ed ecco il risultato:

pigreco a lenovo ~/dev/qgis3 $ cmake
-DCMAKE_INSTALL_PREFIX=/home/pigreco/bin/qgis-3.0
-- The CXX compiler identification is unknown
CMake Error at CMakeLists.txt:10 (PROJECT):
  No CMAKE_CXX_COMPILER could be found.

  Tell CMake where to find the compiler by setting either the environment
