Hi Jeroen,
which QGIS version are you using exactly? Which WKT type is the input 
point layer?
AFAIK the "Points to Path" (native:pointstopath) processing algorithm 
correctly adds the M value to the output line vertices if the input 
points have an M value as you can see in the screen recording available 
at https://jumpshare.com/s/5J2ipdRIijEiNJUkTTmO.
