Forwarding from GRASS dev mailing list, as a good example to follow.
@Mentors: remember to offer to your would-be students code challenges to
evaluate their capabilities with the development environment. @Students: if
you're not offered code challenges, find them for yourselves browsing the
bug tracker, and discuss patches in the dev mailing lists of your chosen
project. This will demonstrate you're proactive and capable, and will
likely increase your chances to be selected.

Dear all,

we suggest specific tickets to GSoC often tailored to a specific GSoC idea
they are interested in. However, in general it is hard to find a right
topic for a person who wants to start contributing to GRASS GIS (as opposed
to writing additional modules with some specific functionality).

I suggest introducing some special keyword (tag) to Trac tickets which
would mark the ticket as suitable/recommended for contributors-beginners.

Tag "beginners" seems to refer to problems affecting the beginners (the
users). Tag "simple" may not be good either, because how simple it is quite
relative. Perhaps there can be a special property to show estimated
complexity of solving the ticket.
