I´m not a committer of postgis nor postgres, but this would be my reasons:

1. For the postgis package  to be up-to-date with the latest stable version
of postgreSQL is a sales pitch.
2. For one or more of the features/functions in the 7.2 version that isn´t
postgis specific.
3. To ensure that the system is running on a actively developed version of
the database server.
4. The jdbc driver has gone through massive development in the 7.2 release.
I´m using it. :-)
