Andreas -

The problem is twofold -

  * QGIS (or rather the underlying ogr library)  has a bug in some cases
    when determining the projection in TAB files (i.e EPSG:25832) . This
    bug is solved in version 1.10 of GDAL.
  * Your editing of QGIS CRS parameter database  won't give you the
    wanted result, because when QGIS try to find the projection of a tab
    dataset it (probably) goes like this:
    a) find MapInfo specific projection parameters in tab file,
    b) convert these to the equivalent  proj4 definition and
    c) do a reverse lookup to find the EPSG code
    QGIS never will never find your edited CRS parameters

As you suggested, a solution to this problem could be to let QGIS 
override the "build-in" projection in a tab file with a .qpj companion 
file just like the case with shape files. (Doesn't it do this already ?)
I suggest you make a feature request on the QGIS bugtracker
