The ".DBT" file is a memo file; for hold large text items.

Ari,
I checked the dbf specs at:
http://www.clicketyclick.dk/databases/xbase/format/dbf.html#DBF_STRUCT
It indicates that 0x03 is "File without DBT" whatever that means, but it
is the same dbf version code I found many years ago in ESRI supplied .dbf
files.

It might be instructive if you would provide the before and after .dbf
files for review.
I don't have ArcGIS so it is hard for me to test, but I haven't heard
of much in the way of problems like this.
