It's not RStudio or sf specific though, I think it's worth asking here because there are many many R packages using GDAL and they essentially share the same simple installation, after the GDAL version choice has been made. What really matters is your operating system and the method you have available for installing GDAL itself. On windows and macos you get the versions built by CRAN itself, on Linux you get the version supported by your distro.

sf repo isn't a general place to get support so I wouldn't encourage asking there, I'm happy to help point to options if you share details of your compute setup
