the North Carolina sample dataset comes with a landsat mapset, and there
is an extra imagery mapset for the Spearfish dataset you can download.

presumably the examples in the GRASS book use either of these depending on
the edition. The GRASS 4 Image Processing manual linked from the i.class
help page most likely uses the Spearfish extra imagery dataset.
