I have access to ArcInfo, ArcView, ArcGrid, and GRASS at my day job with the
US Forest Service. I am still learning what the capabilities of all these
programs are, but I find myself going back to GRASS for a number of functions. 

The routines in GRASS that don't seem to be available in the other programs
include ortho-photo corrections (i.ortho.photo), image-to-image registration
(i.points), creation of single-band images from 3-band images (i.composite,
i.quantize) quick multi-map reporting (r.report), simple multi-map inference
(r.infer). 

For map production and data base operations, I usually use ArcView. For
vector map editing, ArcInfo seems the most capable.
