Moritz,

  You are correct that the man page is ambiguous about this. In other raster
GIS software I've used, the reclassification function allowed me to specify
those values I wanted to change, and leave the others untouched.

  Have you tried this with your data? Because the output is a difference
file (that is, the rules applied each time the reclassified map is specified
for use), you lose nothing in your original data by experimenting. Please
post here what your experimentation finds.
