Thanks to Lisa Zygo I have the answer to my DEM query.  The grass function
m.dem.extract worked perfectly on 5 of the 6 DEMs I bought.  The last had
some kind of bogosity in its file format that the program didn't expect, but
I got it covered.

Mostly I'm posting this so the answer appears in the archives along with the
question.
