Hi,

use this format to the install script:
sh grass5*install.sh grass_binpackage.tar.gz <dest_dir> <bin_dir>
where <dest_dir> is the destination of the grass installation
(/home/grass)
and <bin_dir> the dir to store the start-up script (~/bin,
/home/grass/bin).

You need to check if ~/bin is in your path, so that you can start grass
by typing
grass5.

IMHO this is written in the READMEs etc. on the server and issued if you
call the script without options.
