[GRASSLIST:4849] Best/easiest data format questions?

I am in the process of starting a new project, and at the point of
assessing what kinds of data we have, and what kinds we need, and what formats.
It looks like Grass, and export/import, has become a lot more sophisticated
since I last used it, so I would greatly appreciate any advice on what the
best non-grass formats are, and how best to import them.
I have recently been trying to use ogr2ogr to turn TABs into SHPs then
import the SHPs using v.in.shp. This works, but using the commands naievely
loses all of the associated data for the shapes (eg. I have a vector TAB
with geology info (about 13 fields)). I can import the DBF file, but it has
lost it's association with the areas.
Should I get get this data in other formats (eg. E00)?
Should I be importing it differently? AFAICT, the TAB attrs *are* being put
in the DBF file. They are just not making it into Grass.
Should I try using 5.1 (I am using current 5.0 from CVS).
Is there a HOWTO out there that lists the current best practice on
importing each external format (I notice that v.in.mif is not working at
the moment).
Sorry for the shopping list of questions.
