No trick, r.mapcalc is set-up to behave that way, while most other
commands are not.  Some commands can read/write  standard input/output
via pipes, but most commands just take some arguments to process (such
as rast=foo).  Something like r.mapcalc has an expression parser which
is a whole 'nother beast.
