I'm not sure I understand exactly what you are trying to do (what are 
point-and-click options ?), but you might want to look into r.category 
to set character labels. AFAIK, r.out.gdal does not export the label 
names to a tif, but you can always export the link between numeric pixel 
values and labels using r.category.
