If you theme your layer you can assign different symbols to each theme rule.
Or, if you use multiple scale ranges non-thematically, each range can have a
different symbol assigned.

Subject: [mapguide-users] Multiple Symbols in a Layer
Is a layer contstrained to use one symbol only? It looks that way in the XML
schema, where you record something like this for the W2D element:
<W2D>
<Unit>Millimeters</Unit>
<SizeContext>DeviceUnits</SizeContext>
<SizeX>15</SizeX>
<SizeY>15</SizeY>
<W2DSymbol>
<ResourceId>Library://Gulfislands/Symbol
libraries/GulfIslandSymbols.SymbolLibrary</ResourceId>
<LibraryItemName>helicopter</LibraryItemName>
</W2DSymbol>
</W2D>
Is there a way to make multiple symbols for a given layer?
