Adding this feature to the Site Admin UI is fairly simple.  First, because until now there have not been any Mapping Service properties presented in the UI, handling for that service must be added to ServicesProperties, ServerDataFunctions, and ResizablePageComponents files.  The Mapping Service, of course, would present the new font property.
