Brian,

If you haven't found http://ms.gis.umn.edu yet check it out. There are a 
lot of tutorials, and howtos, look for the symbology one which will show 
you some more advanced examples. We can help you will any and all of this.

There is not documentation on the C api. We all use the mapscript 
languages as they are more stable.
