Try something like this:

LAYER
   CLASSITEM COLOR_MAP
   ...
   CLASS
     EXPRESSION "value1"
     STYLE
       COLOR r1 g1 b1
       ...
     END
   END
   CLASS
     EXPRESSION "value2"
     STYLE
       COLOR r2 g2 b2
       ...
     END
   END
   ...
END
