Have a look at for example these documents first:

Depending on your case you can
- insert your query directly inside the DATA sentence
- create a PostGIS view with your query
- in you want to get something more dynamic, use run-time substitution
inside DATA
http://mapserver.gis.umn.edu/docs/howto/runsub gives some hints about
run-time substitution.
