Look at the list of layers in your getfeatureInfo request - just
remove the layers you don't want to show up.

You'll need to load the shapefiles in to PostGIS and then create a
view of the joined tables.
http://geoserver.org/display/GEOSDOC/PostGIS+DataStore shows how to do
this.
