I would strongly recommend you take this to the geoserver list. If you 
know what issue is with geoserver then you are in a better position to 
adjust OL accordingly.

When I am having troubles like this I use a tool that lets me post to 
geoserver. Then I fiddle the xml to see what works server-side. Once 
I've got a working post serverside, I work back to getting OL to 
generate it.
