Creating subsets of OSGeo-Live has not happened yet, but I expect it 
will at some point.
The issue will probably be forced within the next few releases, now that 
we are getting close to the maximum size of a DVD, and will need to make 
decisions about what not to include.

It is actually very easy to change the build process to create less.
You just comment out what is installed in the main.sh script.
