[Live-demo] Where should JAVA_HOME be set (if overriding default=openjdk 1.7)?

As background:
When Hamish's advice conflicts with mine, on matters such as install 
scripts and debian installers etc, you are usually better to defer to 
Hamish's advice. He has a much broader understanding of these technical 
issues than myself.
