You've gotten further than I have. I was unable to get windows to see
more than 1 partition. Which is odd since multiple partitions work on
usb connected hard drives. I've actually stuck with 8 GB drives for now,
creating the image, 1-2 GB of persistence (which is really for software
updates and minor settings) and then the rest of the drive is extra
space that can be used on any OS. An important part of that though is to
make sure people save outside the /home and onto the usb stick in the
free space.

I doubt it's the partition tables but might be the USB detection ability
of the boards (possibly a power issue). Even with CDs in a lab of 30
identical machines 4-5 will often fail to boot from external media.

I'd be interested in looking into this. When in linux you can print out
the partition info with:
sudo fdisk -l
