It's not documented because should be common way.
Can you test ensuring your source tree is clean ?
The VPATH usage may get confused if some files generated
files are in the source tree too. Well-written configure
scripts would refuse to configure from a build tree if
the source tree is "already configured" (I didn't implement
that part, but feel free to file a ticket).

Of course also file a ticket for your problem if it isn't
fixed by cleaning up the source tree.

I will note: Dronie (cloud and osgeo) and gitlab are already
building out-of-tree, so things are known to work there.
