Thanks Ralf,
I don't understand how to use this.
pgsql2shp -f myshape mydb -h localhost -P xxxx -u postgres mytable -export 
PGCLIENTENCODING=LATIN1 ????

I'm using PostGIS 1.3.5 on an Windows-System
