Agreed with Bruce, Geoeserver or Openlayers are not merely to explore the data stored in PostGIS. Rather, it is about exploring a theme that is interested for a certain audience. Therefore, a logical flow is, conceptualize a theme, conceptualize users, accordingly design database and construct conceptual schema, transform your data following the conceptual schema (could be only one table), construct geoserver layers, and finally enrich the visualization and interactivity through GPOS (Openlayers, google maps, ....). Shortly, monstrous is still in the data.
