Just for a note of completion in case anyone does a future search on this topic, here are two equivalent commands which work for me:

]# cs2cs +proj=utm +zone=10 +datum=NAD83 +to +proj=utm +zone=10 +datum=NAD27  </home/jb/utm83.txt

Since the nad2nad command requires fewer characters, I think I will use that one
from now on. Thanks to Frank for his help.
