Hi Tim and all,
We have managed to package QGIS with version number. So, you can have all
versions of QGIS installed side-by-side:
https://lutraconsulting.github.io/qgis-mac-packager/
(master build is in progress and should be ready in an hour or so).
Feel free to test and file tickets.
