[QGIS-Developer] OSGEO4W messing up Grass versions

Having installed QGIS on a new windows PC using OSGEO4W installs a QGIS
pointing to a wrong Grass version.

QGIS expects Grass 7.6.1 but Grass 7.8.0 is being installed:

Trying to run Grass from Processing gives this error:

The option to set the GRASS path does not exist anymore in the Processing
Provider settings.
Where do I change it?
