That dialog only shows the CRSes the WMS server offers.  Once the WMS layer is
inserted you can change its CRS.  With on-the-fly-projection enabled QGIS will
then reproject into the newly selected CRS, although the WMS will still deliver
the data in the initial selected CRS.
