Hi Ross,
You can put the symbol anywhere you like. You specify the root of the
SVG file location in "Settings" -> "Options" -> Tab "System" -> section
"SVG paths". QGIS also comes with some "builtin" SVG files - location
depending on the operating system you use. Once the symbols are found
you can use the categorized renderer in the "Style" section and
graphically assign the SVG symbol with a category.
If you move your project around to different computers just think about
copying these symbols as well and set the SVG paths again at your other
computer.
