The usage of presets is quite simple.

While in the map canvas, set the desired visibility of your layers. Now at
the top of the legend there is a eye Icon (presets). Click on add preset
and give it a meaningful name.

Then go to the composer. Notice that near the "lock layers for map item" is
also an eye icon. You can now choose to select the already saved preset for
this map item. Since you can have many presets, you can use it to switch
between layers combinations.

As a preview, in the current master version there's a new feature that will
allow to save different style settings for the same layer. This feature is
connected to presets, meaning that you can use the same layer with
different styles in different compositions (or even in different map items
in the same composition) without any duplication, and switch between them
using the  presets.

How cool can that be?
