Hi Giacomo,
I am cc'ing the list again.
Now I understand what you want to do. No, it is not possible for now.
Can you open a feature request at http://hub.qgis.org/ ?
The "pseudo-layers" for categories in the legend tree are quite new and
haven't been fully polished for such cases.
I think it would be a very useful addition, being able to toggle all
categories of a layer.
