That is a wise decision. 

Similar to the switch between PowerPC and Intel one can expect that old
software will "just run", but will have "inferior" performance until all
the upstream libraries introduce more processor specific optimizations. 

Even Rouault from GDAL/OGR - an important library for QGIS - already
mentioned that there are optimizations existing specifically for the
Intel processors, but no or few for the arm processor platform. 

It is probably wise if you keep the older Intel based Macs for the next
2-3 years and let other people experience the initial problems of a new
platform.
