Hi Julia

I think you are needing to rather make use of the Rules symbology 
styling, which allows for sublevels. First, as you have done, create 
your symbology using Classification. Then, change the styling type to 
Rules. Under Other, right click and then you get options to create 
additional sub-level/nested categories, based upon another field etc.
