Hi Nickn,
after you have made sure that the problem also occurs using a new user 
profile,
the best way to check what's going wrong is to provide a full 
reproducible example, including a QGIS project file (if needed) sample 
layer(s), relevant parameters used and step-by-step instructions.

Since you say the issue occurs on multiple different systems (both 
Windows and Linux) and that it didn't occur using previous versions, I 
think the straightforward way to do so is to open an issue report 
providing all the requested info and also indicating which previous QGIS 
version (including the GDAL/OGR version) the issue did not occur with 
and which current QGIS versions (including the GDAL/OGR version) the 
issue does occur.
