[Ubuntu] I added ubuntugis-unstable to compile QGIS, but now I cant install QGIS via apt

Yes.  You installed newer version of dependencies, that won't be downgraded to
the versions that the stock qgis needs.  So uninstall all qgis packages (and
maybe other dependencies that came from ubuntugis) and install the stock
qgis afterwards.
