There's a promissing vmware virtual gis machine at

I've never tried it but it looks nice.

If you're looking for an easy way to get started w/mapserver on linux
you can try FGS. There are a few gis-centric linux distros like
HostGIS Linux and GIS-Knoppix. On windows there is ms4w.
