Marcin, you have to solve it on the SQL level. I.e. use the
SQL-functions installed by ArcGIS Server to convert the ESRI geometries
to a GDAL readable geometry.
Deployed e.g. as database triggers whenever an ESRI geometry is updated.
I think the latest official SDK release is for 10.0:

> You need the ArcSDE Client SDK. I am doubtful you will find a copy that can work on Ubuntu 20.04, however. It is my understanding that Esri stopped distributing it multiple releases ago, and it is probable many changes have happened to SDE's internals that could make a version of the Client SDK fail to work even if you can find it.
