Hello Dane,
We have not restricted the use of Terminal .
To test this issue , i started a new GISVM on click2try as a non-logged in user.
Yes, i observed that after click of icon "Start Mapnik & TileLite" it opened me a terminal window and closed but i cannot view what has happened at back. To verify this , i have executed Mapnik from command line. Here is what i did and observed.
Opened Terminal.
$ dash /home/user/launchassist.sh /usr/bin/mapnik_start_tilelite.sh
Above command out some process running status and shown how to access it over web.
http://localhost:8000
So i kept the terminal opened and launched one browser and entered link http://localhost:8000
which opened me one web page. I just assume that it could be an home page of webnik (not sure)
Question:
a) Is the observed web page displayed is mapnik application ?
b) Does click of "Start Mapnik & TileLite" should open web browser as well to launch mapnik application.?
I am not sure above information helped.
About uDig,
uDig application some times works and sometime does not work. I request the developer to observ the behaviour of udig on gisvm and help us on it.

Arun is the right person to work with on this one. I do not want to shortcut anything you are doing with him. But, I did observe something. First, I started a new GISVM virtual machine on click2try as a non-logged in user. I logged into the GISVM desktop as the user "user". I am able to open a terminal window. Then, I notice that if I try to start Mapnik from the icon it fails the first time. But, if I try to start it again, it succeeds.
After that, I notice that uDig seems to start up successfully.
I don't know if this helps or not.

I just tested the VM linked from the public announcement.
It looks as if you have restricted the use of the terminal? That essentially breaks the Mapnik demo because it launches in a terminal window to show the server process. I also cannot open a terminal on the VM now to be able to debug...
If I click the icon "Start Mapnik & TileLite" I get:
"Failed to Execute default Terminal Emulator: Input/Output Error"
Also, double-clicking the uDIG icon does nothing.

Yes, the new VM works with Python 26. And therefore the Mapnik Python 2.6 bindings now work.
And with this small fix (which I've been waiting to make), the demo application now works perfectly:
