Good question!!!

I think the most popular OS are Unix and Linux

In order to answering to your question, as postgis-users
 at job we (me and gerald) work with Debian - Arch 32 and AMD 64 -, Windows XP, Gentoo, fedora core 3

We have  Mac OS X too (Unix)

So I think we could suppose that the OS most used are Unix, Linux and Windows
