Hi Stefano,

Pulling of the translations should be every day, and according to this footer in
https://docs.qgis.org/3.16/it/docs/user_manual/index.html
there was a succesfull build this morning.

We ARE talking about docs yes? 
Website also seems to be build today (to see in the footer of the frontpage only).

Can you give more details why you conclude that the translations are not upto date?
